Every Tamam's tray is prepared by hand in small batches, never mass-produced. We begin with clarified samneh and paper-thin phyllo, then build the layers one patient sheet at a time. Each tray rests in the oven until the top is shatteringly crisp and the underside is soaked, never soggy, with our orange blossom and rose water qater.
